The oil that
started it all.
Cold-pressed Koroneiki olives from a single family estate in the hills above Heraklion. Grassy, peppery, and intensely alive — the benchmark for everything we do.

What makes this oil different
Most olive oil travels a long, anonymous journey — blended from multiple countries, stored for months, stripped of the character that makes great oil great. Ours doesn't. Every bottle comes from a single estate, a single harvest, a single press.
The Koroneiki olive is small, intensely flavoured, and notoriously difficult to harvest at scale. That's exactly why most producers don't bother. The family behind our oil has been doing it for three generations — and they have no intention of changing.

Tasting notes
Great olive oil has a flavour profile as complex as fine wine. Here's what to expect when you open a bottle.
On the nose
Fresh-cut grass, green tomato, and a whisper of artichoke. Unmistakably Koroneiki.
On the palate
A clean, grassy entry that opens into a rich, buttery mid-palate before a long, peppery finish.
The finish
That distinctive back-of-the-throat pepper — a sign of high polyphenol content and genuine freshness.
From the estate
"We press within four hours of harvest. Every hour you wait, you lose something. We decided a long time ago that we would never lose that."
— The Papadakis family, Heraklion, Crete
