Shrimp Santorini

This traditional Greek recipe disregards the notion that seafood and cheese don’t mix, and it works beautifully, resulting in a harmonious balance of flavors. Though it can be made year round with canned tomatoes, it is sensational with fresh sweet ripe ones, so best prepared in summer. Serve it as a main course with rice or potatoes, or in small portions as an appetizer, taverna-style dinner idea.


Ingredients:

 

  1. 1 Onion, chopped
  2. 4 Garlic cloves, minced
  3. 2 lb. Tomatoes***
  4. 1 lb. Shrimp, cleaned, peeled and deveined
  5. 6 oz. Feta cheese
  6. ½ tsp. Red pepper flakes, crushed
  7. ½ tsp. Oregano, dried
  8. 3 tbs. Parsley, chopped
  9. Extra virgin olive oil
  10. Salt & Pepper

Spanakopita

 Spanakopita is a delicious savory Greek pie recipe made of perfectly crispy layers of phyllo dough and a comforting filling of spinach and feta cheese. Great dinner or lunch idea.


Ingredients:

 

  • 16 oz frozen chopped spinach, thawed and well-drained
  • 2 bunches flat-leaf parsley, stems trimmed, finely chopped
  • 1 large yellow onion, finely chopped
  • 2 garlic cloves, minced
  • 2 tbsp extra virgin olive oil
  • 4 eggs
  • 10.5 oz quality feta cheese, crumbled
  • 2 tsp dried dill weed
  • Freshly-ground black pepper

Pasta Alla Grecca

In Greek food we use a lot of pasta. The kind of pasta you scarf down after a long, day. Eggplant, butter, onion and cheese make this a delicious dish. 


Ingredients:
Serves: 4 

  • 1 (500g) pack penne pasta
  • 5 tablespoons olive oil
  • 2 to 3 tablespoons plain flour
  • 2 small aubergines, cubed
  • 2 medium onions, chopped
  • 1 clove garlic, minced
  • 4 tomatoes, cubed
  • 1/2 teaspoon dried oregano
  • 1 pinch paprika
  • 1 pinch cayenne pepper
  • 3 tablespoons black olives, pitted
  • 230g tomato sauce (optional)
  • salt and pepper, to taste
